What's the difference between a single table and multi table online poker tournament?

a single table (often called sit 'n gos) game will only allow the predetermined max number of players to sit on 1 table or if a time start single table a minimum number of players to start ... multi table games allow for higher number of players to join before the game starts ( tho some sites allow late registration for a period of time after game starts) & distributes the players as equally as possible on  how ever many tables neddedc to accomadate them

Each poker site holds different sized tournaments, some single table and some multi tables. The single table tournaments are called sng's and have a max of 9 or 10 people, while a multi table tournament contains 2 or more tables.
